1. Osmanthus Jello Bites with Simply Swift™ 🥇

Ingredients
1 piece Golden Nest Simply Swift™
3 packets unflavored gelatin
½ tbsp dried osmanthus flowers
¼ cup monk fruit sugar
4 cups water (2 for bird’s nest, 2 for infusion & gelatin)
Instructions
- 
Cook Bird’s Nest 
 Boil 2 cups water. Add 1 Simply Swift™ piece and cover. Simmer on medium for 15 minutes. Turn off heat and let cool.
- 
Make Osmanthus Infusion 
 Simmer 1½ cups water with dried osmanthus flowers and monk fruit sugar for 5 minutes. Strain and set aside.
- 
Bloom Gelatin 
 Sprinkle gelatin over ½ cup cool water and let sit for 5 minutes to bloom.
- 
Combine 
 Warm the osmanthus liquid slightly. Stir in bloomed gelatin until fully dissolved. Let cool to room temperature. Add the cooked bird’s nest and mix well.
- 
Mold & Chill 
 Pour mixture into jello molds or silicone trays. Chill in the refrigerator for 4–6 hours, or until fully set.
2. Silky Steamed Egg with Bird’s Nest (Serves 2) 🥈

Ingredients
1 piece Golden Nest Simply Swift™
2 eggs
1.5 cups chicken broth
1 tsp soy sauce
Pinch of salt
Instructions
- 
Cook Bird’s Nest 
 Boil 2 cups water. Add 1 Simply Swift™ piece and cover. Simmer on medium for 15 minutes. Turn off heat and let cool.
- 
Prepare Egg Mixture 
 Gently beat eggs and mix with chicken broth, soy sauce, and salt. Strain if needed for a smoother texture.
- 
Steam 
 Pour mixture into 2 small bowls. Steam over low heat for 12 minutes until set.
- 
Finish & Serve 
 Top each bowl with cooked bird’s nest and a drop of soy sauce. Serve warm.
3. Milky Mango Coconut Bird’s Nest Dessert 🥉

Ingredients
1 piece Golden Nest Simply Swift™
1/2 ripe mango, diced
1 cup coconut milk beverage
1 tsp sugar or honey
Instructions
- 
Cook Bird’s Nest 
 Boil 2 cups water. Add 1 Simply Swift™ piece and cover. Simmer on medium for 15 minutes. Turn off heat and let cool.
- 
Prepare Coconut Base 
 In a glass, mix chilled coconut milk with sugar or honey until dissolved.
- 
Assemble 
 Add the cooked bird’s nest to the coconut mixture and stir gently. Top with diced mango and serve chilled.

Swallow Nest Matcha Latte

Ingredients
1 piece Golden Nest Simply Swift™
1 pack matcha sachet
1/4 cup hot water
1/2 cup oat milk, warmed
1 tsp sugar
Instructions
- 
Cook Bird’s Nest 
 Place 1 Simply Swift™ piece in a microwave-safe bowl with water. Cover and microwave on high for 4 minutes. Let cool.
- 
Prepare Matcha 
 Whisk matcha powder with hot water until smooth and frothy.
- 
Combine 
 Stir in warm oat milk and sugar until fully blended.
- 
Add Bird’s Nest 
 Gently mix in the cooked bird’s nest and serve warm.
Cantaloupe Ball Coconut Water Swallow Nest

Ingredients
1 portion cooked Golden Nest Simply Swift™
1/2 cup cantaloupe
3/4 cup chilled coconut water
1 tsp sugar syrup
Pinch of salt
Instructions
- 
Cook Bird’s Nest 
 Boil 2 cups water. Add 1 Simply Swift™ piece and cover. Simmer on medium for 15 minutes. Turn off heat and let cool.
- 
Prepare Cantaloupe Balls 
 Use a boba straw or melon baller to scoop cantaloupe into small balls.
- 
Assemble 
 Add cantaloupe balls into a glass. Pour in chilled coconut water, sugar syrup, and a pinch of salt. Stir gently.
- 
Top & Serve 
 Spoon the cooled bird’s nest over the top. Serve immediately or chill before serving.
