Double Steamed Swallow Red Nest with Dried Osmanthus and Lotus Seeds

Ingredients : 

• Red Nest
• 1 to 2 tbsp of Dried Osmanthus
• Coreless lotus seeds
• Rock sugar
• Water

Instructions :

1. Boil water and add some rock sugar and the washed lotus seeds, don’t cover up the pot.
2. Add the prepared Golden Nest Premium Red Bird’s Nest, rock sugar and dried osmanthus to a ceramic pot.
3. Add water to about 80% full.
4. Wrap the pot with cling wrap to trap the steam inside and put it in a double boiler.
5. After an hour, the lotus seed should be tender and the water level is reduced.
6. The swallow nest in the ceramic pot should be ready as well.
7. Scoop the swallow nest into a smaller bowl, add the lotus seed on top and serve.

Notes :

• The lotus seed is cooked separately from the swallow nest to make the soup clearer and to make the lotus seed candied.
